1/2 cup chopped walnuts 3 cups chopped cooked chicken 1 cup seedless red grapes, halved 1 large Gala apple, dice 1 cup diced celery ¼ cup diced red onion 1/2 cup clean aioli (or make your own #bewellmayo) 1 head butter lettuce Salt and pepper to taste
Preparation:
Preheat oven to 350°. Bake walnuts in a single layer in a shallow pan 4 to 5 minutes or until toasted and fragrant, stirring halfway through.
Stir together chicken, grapes, apple, celery, onion, mayo and walnuts. Add salt and pepper to taste.
Place a few leafs of washed butter lettuce in a bowl and cover with a large scoop of chicken salad.
