Pork Al Pastor Tacos Recipe

This simplified Pork Al Pastor Tacos recipe features marinated pork, spiced with Redbeard Al Pastor Seasoning and pineapple juice, cooked on a vertical skewer. It’s an easy and delicious way to enjoy tender, flavorful tacos! 

Ingredients:

2 lbs pre-sliced pork shoulder

1 large pineapple, sliced (one slice reserved for topping the skewer)

3 tablespoons Redbeard Al Pastor Seasoning (or your preferred seasoning)

1 cup pineapple juice

Corn tortillas

Fresh cilantro, chopped (for garnish)

Salsa Verde (optional)

Cotija cheese (optional)

Instructions: 

Marinate the Meat:

Marinate the Pork: Place the pre-sliced pork shoulder in a large resealable plastic bag. Add 3 tablespoons of Redbeard Al Pastor Seasoning and pour in 1 cup of pineapple juice. Seal the bag and massage the seasoning and juice into the pork to ensure even coverage. Let the pork marinate in the refrigerator for at least 1 hour, or preferably overnight, to enhance the flavor.

Assemble the Vertical Skewer:

Prepare the Skewer: After marinating, remove the pork from the bag and layer it onto a vertical skewer, stacking each piece until all of the pork is on the skewer. Place one large pineapple slice on top to lock in moisture and add a hint of sweetness during cooking.

Cook the Pork:

Roast the Pork: Preheat your grill or oven to medium-high heat (around 375°F). Cook the pork on the skewer until the outside is caramelized and slightly charred, about 1 to 1.5 hours. The pineapple on top will keep the meat tender and juicy while roasting.

Assemble the Tacos:

Warm the Tortillas: Heat the corn tortillas on a skillet or directly on the grill until warm and slightly toasted.
