Mother’s Day Strawberry Bellini

Bright, bubbly, and bursting with fresh strawberries—this cocktail is a sweet and simple way to toast Mom on her special day.

Ingredients:

  • 3 cups fresh strawberries, hulled and sliced
  • ¼ cup confectioners’ sugar (adjust to taste)
  • 1 tablespoon brandy (optional, for depth of flavor)
  • 1½ cups chilled sparkling wine
  • 3 whole strawberries, for garnish

Instructions:

  1. Prepare the strawberry purée:
    In a blender, combine the sliced strawberries, confectioners’ sugar, and brandy. Blend until completely smooth.

  2. Chill:
    Transfer the mixture to the refrigerator and chill for at least 10 minutes to let the flavors meld and the purée cool.

  3. Assemble the bellinis:
    Divide the chilled strawberry purée evenly among 3 champagne flutes (about ⅓ full each).

  4. Top with sparkling wine:
    Slowly pour ½ cup of sparkling wine into each glass. Stir gently to combine.

  5. Garnish and serve:
    Garnish each flute with a whole strawberry on the rim or a strawberry slice inside the glass. Serve immediately while bubbly and fresh.
