Ingredients:
3 cups fresh strawberries, hulled and sliced
¼ cup confectioners’ sugar (adjust to taste)
1 tablespoon brandy (optional, for depth of flavor)
1½ cups chilled sparkling wine
3 whole strawberries, for garnish
Instructions:
Prepare the strawberry purée: In a blender, combine the sliced strawberries, confectioners’ sugar, and brandy. Blend until completely smooth.
Chill: Transfer the mixture to the refrigerator and chill for at least 10 minutes to let the flavors meld and the purée cool.
Assemble the bellinis: Divide the chilled strawberry purée evenly among 3 champagne flutes (about ⅓ full each).
