  • Green onions – 4-5 stalks, chopped
  • Corn kernels – ½ cup (fresh, frozen, or canned)
  • Garlic – 2 cloves, minced
  • Cheese sauce – ½ cup (or as needed for desired creaminess)
  • Salt – to taste
  • Olive oil or butter – 2 tablespoons for frying

Step-by-Step Instructions:

Prepare the Chicken and Mushrooms:

  • Start by cutting your chicken breasts into bite-sized cubes using our LIGHTNING ProCut Santoku Knife. Heat a pan over medium-high heat and add 1 tablespoon of olive oil or butter. 
  • Once the pan is hot, add the chicken cubes and fry them until they’re golden brown on all sides, which should take about 5-7 minutes.
  • Remove the chicken from the pan and set it aside. In the same pan, add the sliced mushrooms and cook them for about 5 minutes, until they release their juices and become golden.

Tip: Don’t overcrowd the mushrooms in the pan, or they will steam instead of sauté.

Prepare the Vegetables:

  • While the chicken and mushrooms are cooking, dice the red bell pepper and chop the green onions. Ensure your vegetables are evenly chopped for uniform cooking.
  • If you’re using fresh corn, you can blanch it for a minute to soften it slightly.
    Optional Variation: You can also add additional vegetables like carrots or zucchini for more texture and color.

Combine Everything:

  • Return the chicken to the pan with the sautéed mushrooms.
  • Add the diced red bell peppers, green onions, and corn kernels to the mixture.
  • Stir in the minced garlic, and season everything with a pinch of salt to taste.

Tip: For an extra kick, you can add some chili flakes or paprika.

Add the Cheese Sauce:

  • Pour the cheese sauce into the mixture and stir until all ingredients are evenly coated. Cook for another 2-3 minutes, allowing the flavors to meld together.
