Ingredients:6 eggs1/2 cup shredded cheese (cheddar, mozzarella, or your choice)1 cup fresh spinach, chopped1/4 cup milkSalt and pepper to tasteOptional: diced tomato, onion, or bell pepper Instructions:Preheat oven to 180°C (350°F).Grease a muffin tin or use paper liners.Mix all ingredients in a bowl: eggs, cheese, spinach, milk, salt, pepper, and any optional veggies.Pour the mixture evenly into the muffin cups.Bake for 18–20 minutes or until eggs are set and tops are lightly golden.Let cool for a few minutes, then serve warm.
