Cheesy Spinach Egg Muffins

Ingredients:

  • 6 eggs

  • 1/2 cup shredded cheese (cheddar, mozzarella, or your choice)

  • 1 cup fresh spinach, chopped

  • 1/4 cup milk

  • Salt and pepper to taste

  • Optional: diced tomato, onion, or bell pepper

Instructions:

  1. Preheat oven to 180°C (350°F).

  2. Grease a muffin tin or use paper liners.

  3. Mix all ingredients in a bowl: eggs, cheese, spinach, milk, salt, pepper, and any optional veggies.

  4. Pour the mixture evenly into the muffin cups.

  5. Bake for 18–20 minutes or until eggs are set and tops are lightly golden.

  6. Let cool for a few minutes, then serve warm.
