Traditional Georgian Chakapuli Recipe
Chakapuli is a rich Georgian stew made with veal, fresh herbs, and wild plums, slowly cooked in white wine for a deeply flavorful and aromatic dish.
Ingredients:
- Veal: 1 kg, cut into small pieces
- White Wine: 200 g
- Tarragon: 200 g, chopped
- Spring Onions: 200 g, chopped
- Coriander: 200 g, chopped
- Wild Plums (or sour green plums): 100 g
- Butter: 2-3 tbsp, cut into small cubes
Instructions:
1. Prepare the Ingredients:
Start by chopping the tarragon, spring onions, and coriander. Set aside.
2. Cut the Veal:
For cutting meat, I recommend the Gunter Wilhelm Premier ProCut 8″ Chef Knife. This versatile, well-balanced knife ensures clean and smooth cuts through veal or other meat types. It will help you cut the veal into small, bite-sized pieces with ease and precision.
3. Layer the Ingredients:
In a large pot, layer the chopped herbs (tarragon, spring onions, and coriander) at the bottom, followed by cubes of butter. Place the veal pieces on top.
4. Add Wild Plums:
Scatter the wild plums on top of the veal, giving the dish its distinctive tangy flavor.
5. Pour in the White Wine:
Pour the white wine over the mixture, using it as the primary liquid for the stew. No additional water is needed as the veal will cook in its own juices and the wine.
6. Cook the Chakapuli:
Cover the pot and cook on low heat for 30-40 minutes. Stir occasionally to allow all the ingredients to combine and the veal to cook until tender.
7. Serve:
Once the veal is tender and the herbs and plums have melded into a flavorful broth, serve hot. Pair the Chakapuli with fresh bread or potatoes for a traditional Georgian meal.
